where does high tea come from?

In Victorian times, people usually ate only twice a day. Late in the morning, a kind of brunch, and in the evening a (late) dinner. The tea we are referring to is called Butterfly Pea Flower tea. Perhaps you have heard of it before, but most likely seen it. It is a natural tea made from nothing but a few dried flowers and a splash of lemon juice. The Butterfly Pea flowers will quickly give a deep blue color to your tea and about 4 to 6 flowers (6 is quite strong!) for a large mug of tea is sufficient. We recommend serving this tea in a glass, such as one of the beautiful tea glasses from Clayre & Eef available in our webshop. When the Butterfly Pea Tea is steeped, it is blue in color. Add a few drops of lemon juice and be amazed by the magic trick this tea has in store for you. The acidity in the lemon juice causes this blue tea to turn into a bright purple color!
